8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract

1/2 teaspoon vanilla extract
1/4 teaspoon salt

Instructions
Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
In a medium bowl, beat the softened cream cheese and granulated sugar until smooth.
Beat in the egg and vanilla extract until just combined.
Spoon the cream cheese mixture evenly into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 15-18 minutes, or until the edges are set and the centers are slightly jiggly.
Let the cheesecakes cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely. Chill in the refrigerator for at least 2 hours.
While the cheesecakes chill, prepare the sugar cookie dough. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
Beat in the vanilla extract and salt.
Gradually add the flour, mixing until just combined to form a dough.
If desired, divide the dough and add a drop of food coloring to one portion. Knead gently until the color is uniform.
Roll out the dough between two pieces of parchment paper to about 1/4-inch thickness.
