2 (20 ounce) cans young green jackfruit in brine or water, drained and rinsed
1 cup vegetable broth
1/2 cup your favorite BBQ sauce
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Hamburger buns, for serving
Coleslaw, for topping (optional)
Instructions
Drain and rinse the jackfruit well. Squeeze out any excess water. You can leave the pieces whole or roughly chop any large chunks.
Place the prepared jackfruit into your slow cooker.
In a separate bowl, whisk together the vegetable broth, BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, onion powder, garlic powder, salt, and pepper.
Pour the sauce mixture over the jackfruit in the slow cooker. Stir gently to coat.
Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the jackfruit is very tender.
Remove the jackfruit from the slow cooker using a slotted spoon and place it in a large bowl.
Use two forks to shred the jackfruit. It should pull apart easily, mimicking pulled meat.
Return the shredded jackfruit to the slow cooker. Stir it into the remaining sauce.
Cook on high for another 15 to 30 minutes, allowing the jackfruit to soak up the final sauce flavors.
Serve the warm pulled BBQ jackfruit piled high on hamburger buns. Top with coleslaw if you like.
Notes
Always drain and rinse the jackfruit thoroughly to remove the brine flavor.
Taste your BBQ sauce before adding extra sugar; some sauces are sweeter than others.
If you prefer a thicker sauce at the end, remove the jackfruit and simmer the sauce on the stovetop until reduced.
