Hearty and Creamy Slow Cooker Chicken Stew

This is the ultimate comfort food! You get tender chicken and hearty vegetables simmering in a rich, creamy broth, all made easily in your slow cooker. It is a perfect set it and forget it meal for busy weeknights.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups potatoes, cubed (Yukon Gold or Russet)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup all-purpose flour (for thickening)
  • 1/4 cup cold water (for slurry)
  • 1 cup frozen peas

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. Add the chopped onion, carrots, celery, and cubed potatoes over the chicken.
  3. Sprinkle the thyme, rosemary, salt, and pepper evenly over the vegetables and chicken.
  4. Pour the chicken broth over all the ingredients. Do not stir yet.
  5. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is easily shredded.
  6. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker. Discard any excess fat.
  7. In a small bowl, whisk together the flour and cold water until smooth to create a slurry.
  8. Stir the slurry into the stew mixture in the slow cooker. Stir well to combine.
  9. Stir in the heavy cream and frozen peas.
  10. Cover and cook on HIGH for an additional 15 to 20 minutes, or until the stew has thickened to your liking.
  11. Taste and adjust seasonings if needed before serving hot.

Notes

  • For an extra layer of flavor, you can add 1/2 cup of dry white wine along with the chicken broth in step 4.
  • Serve this hearty slow cooker chicken stew over mashed potatoes, egg noodles, or with warm cornbread for a complete family friendly stew.
  • If you prefer a thicker stew without using flour, you can use 1/2 cup of instant mashed potato flakes mixed in during the last 30 minutes of cooking.
