Sloppy Joe Cornbread Casserole

Make this easy, one-pan casserole that combines savory ground beef filling with a slightly sweet cornbread topping for a quick family dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup water
  • 1/4 cup brown sugar, packed
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8.5 ounce) package cornbread mix (like Jiffy)
  • Ingredients listed on cornbread mix package (usually milk and eggs)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in the tomato sauce, water, brown sugar, mustard, Worcestershire sauce, chili powder, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  4. Pour the meat mixture evenly into the bottom of the prepared baking dish.
  5. Prepare the cornbread batter according to the package directions, using the required milk and eggs.
  6. Pour the cornbread batter directly over the meat mixture in the baking dish. Do not stir.
  7. Bake for 25 to 30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. If using cheese, sprinkle the shredded cheddar over the top during the last 5 minutes of baking.
  9. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • To prevent the cornbread from becoming soggy, pour the batter gently over the meat mixture without mixing them together.
  • For a richer flavor, substitute 1/2 cup of the water with beef broth.
  • If you prefer a less sweet topping, reduce the brown sugar in the meat mixture to 2 tablespoons.
