2 ripe peaches, pitted and sliced
1 pint cherry tomatoes, halved
1 red onion, cut into wedges
2 tablespoons olive oil
1 teaspoon dried thyme

Instructions
Preheat your oven to 400°F (200°C).
In a large oven-safe skillet, toss the chicken thighs with 1 tablespoon of olive oil, thyme, salt, and pepper.
Arrange the peaches, tomatoes, and red onion around the chicken in the skillet. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper.
