Prepare a quick, single-serving portion of baked oats flavored like carrot cake, perfect for a healthy breakfast.

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup grated carrot
  • 1/4 cup milk (dairy or non-dairy)
  • 1 large egg white
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of salt
  • 1 teaspoon chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a small oven-safe ramekin (about 8-10 oz capacity).
  2. In a small bowl, combine the rolled oats, grated carrot, cinnamon, nutmeg, baking powder, and salt. Mix well.
  3. In a separate small bowl, whisk together the milk, egg white, and maple syrup.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the chopped nuts, if using.
  5. Pour the mixture into the prepared ramekin.
  6. Bake for 20 to 25 minutes, or until the top is set and lightly golden brown.
  7. Let cool for a few minutes before eating directly from the ramekin.

Notes

  • For a creamier texture, use 2 tablespoons of milk and 2 tablespoons of plain Greek yogurt instead of 1/4 cup of milk.
  • You can prepare the dry ingredients ahead of time and store them in a small container. Add wet ingredients when ready to bake.
  • Top with a small drizzle of cream cheese frosting if you desire a sweeter dessert feel.
