Shrimp Tacos with Slaw: Quick, Delicious Weekday Joy

Delicious shrimp tacos with a fresh, crunchy slaw and a creamy sauce. Perfect for a quick and flavorful weeknight meal or taco night.

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrot
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp honey
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  3. While shrimp cooks, prepare the slaw. In a medium bowl, combine shredded cabbage, carrot, and cilantro.
  4. In a small bowl, whisk together mayonnaise, lime juice, honey, and red pepper flakes (if using).
  5. Pour the dressing over the slaw and toss to combine.
  6. Warm tortillas according to package directions.
  7. Assemble tacos by filling each tortilla with cooked shrimp, slaw, and a drizzle of the creamy sauce.

Notes

  • For extra flavor, marinate shrimp for 15-30 minutes before cooking.
  • Adjust the spice level by adding more or less chili powder and red pepper flakes.
  • Top with your favorite taco toppings like avocado, salsa, or hot sauce.
