Shrimp Spinach Pasta in Garlic Sauce

  • 1 pound (450g) linguine or your favorite pasta
  • 1 tablespoon olive oil
  • 1 pound (450g) shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup (120ml) chicken or vegetable broth
  • 1/4 cup (60ml) dry white wine (optional)
  • 4 cups (100g) fresh spinach
  • 1/4 cup (60g) grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add minced garlic to the same skillet and cook for 1 minute until fragrant.
  4. Pour in chicken or vegetable broth and white wine (if using). Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  5. Add spinach to the skillet and cook until wilted, about 1-2 minutes.
  6. Return cooked pasta and shrimp to the skillet. Toss to combine with the sauce and spinach.
  7. Stir in Parmesan cheese. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with fresh parsley.

  • For a creamier sauce, add a splash of heavy cream or a tablespoon of cream cheese along with the broth.
