Shrimp Scampi Pasta Bake with Cheese

This recipe transforms classic shrimp scampi into a comforting baked pasta casserole with a cheesy topping. It’s perfect for a satisfying meal.

  • 1 pound linguine or desired pasta
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Preheat oven to 375°F (190°C).
  3. Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  4. Add minced garlic to the same skillet and cook for 1 minute until fragrant.
  5. Pour in white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2 minutes.
  6. Stir in red pepper flakes (if using) and butter until melted and well combined.
  7. Return cooked shrimp to the skillet. Add cooked pasta and fresh parsley, tossing to coat everything evenly. Season with salt and pepper.
  8. Transfer the pasta mixture to a 9×13 inch baking dish.
  9. Sprinkle Parmesan cheese and mozzarella cheese evenly over the top.
  10. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  11. Serve immediately and enjoy.

Notes

  • For extra flavor, you can sauté a finely diced shallot with the garlic.
  • If you prefer a creamier sauce, add a splash of heavy cream with the butter.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
