Shrimp Mushroom Pasta in White Wine Sauce

  • 1 pound linguine or fettuccine
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine, like Sauvignon Blanc or Pinot Grigio
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add sliced mushrooms to the same skillet. Cook until softened and browned, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Pour in white wine. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until slightly thickened.
  7. Remove from heat and stir in Parmesan cheese until melted and smooth.
  8. Add cooked pasta and cooked shrimp to the skillet. Toss to coat everything in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency.
  9. Season with salt and black pepper to taste.
  10. Stir in fresh parsley. Serve immediately with extra Parmesan cheese.
