Shrimp Fried Rice

This easy shrimp fried rice recipe is perfect for a quick weeknight meal. It’s packed with fresh vegetables and tender shrimp, just like your favorite takeout, but made right in your own kitchen.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup cooked rice, cold
  • 1/2 cup cooked shrimp, peeled and deveined
  • 1/4 cup frozen peas and carrots, thawed
  • 1 egg, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 green onion, chopped

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the cooked rice and stir-fry for 2-3 minutes until heated through.
  3. Push the rice to one side of the skillet. Pour the beaten egg into the empty side and scramble until cooked.
  4. Add the shrimp and peas and carrots to the skillet. Stir everything together.
  5. Pour in the soy sauce and sesame oil. Toss to combine and cook for another 1-2 minutes until the shrimp is heated through and everything is well mixed.
  6. Garnish with chopped green onion before serving.

Notes

  • Using cold, day-old rice works best for fried rice as it prevents the rice from becoming mushy.
  • Feel free to add other vegetables like chopped onion, bell peppers, or broccoli.
  • Adjust soy sauce to your taste.
