12 oz fettuccine pasta
1 lb large shrimp, peeled and deveined
4 tbsp unsalted butter
4 cloves garlic, minced
2 cups heavy cream
1 cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
Cook fettuccine pasta according to package directions. Drain, reserving about 1 cup of pasta water.
While pasta is cooking, melt butter in a large skillet over medium heat.
Add minced garlic and cook until fragrant, about 1 minute.
Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
Pour heavy cream into the skillet and bring to a simmer.
Stir in grated Parmesan cheese until melted and the sauce is smooth.
Season with salt and black pepper to taste.
Add cooked fettuccine to the skillet with the sauce. Toss to coat.
If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Return shrimp to the skillet and toss gently to combine with the pasta and sauce.
Serve immediately, garnished with fresh parsley.
Notes
For a milder garlic flavor, use fewer garlic cloves.
You can add a pinch of red pepper flakes for a touch of heat.
Feel free to add steamed broccoli or asparagus for extra vegetables.
