1 pound linguine or your favorite pasta
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
2 cloves garlic, minced
1 pound asparagus, trimmed and cut into 1-inch pieces
1/2 cup dry white wine or chicken broth
1/4 cup fresh lemon juice
1/4 cup grated Parmesan cheese, plus more for serving
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
Instructions
Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
Add minced garlic to the skillet and cook for 30 seconds until fragrant.
Stir in asparagus and cook for 3-5 minutes, until tender-crisp.
Pour in white wine or chicken broth and lemon juice. Bring to a simmer and cook for 2 minutes.
Add cooked pasta to the skillet with the asparagus mixture. Toss to combine.
Stir in cooked shrimp, Parmesan cheese, and fresh parsley. If the pasta seems dry, add a little reserved pasta water until it reaches your desired consistency.
Season with salt and pepper to taste. Serve immediately, topped with extra Parmesan cheese.
Notes
You can use chicken or vegetable broth instead of white wine.
Add a pinch of red pepper flakes for a touch of heat.
Fresh herbs like basil or dill would also work well in this dish.
