1 pound shrimp, peeled and deveined
1 head broccoli, cut into florets
12 ounces pasta (linguine or fettuccine work well)
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup chicken or vegetable broth
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Red pepper flakes, optional
Instructions
Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
Add broccoli florets to the same skillet. Cook for 5-7 minutes, stirring occasionally, until tender-crisp. If needed, add a splash of broth to help steam the broccoli.
Return cooked shrimp to the skillet with the broccoli. Add cooked pasta, reserved pasta water, and broth. Toss to combine.
Stir in fresh parsley. Season with salt, black pepper, and red pepper flakes if using.
Serve immediately.
Notes
Adjust garlic to your preference.
For extra flavor, add a squeeze of lemon juice at the end.
You can use frozen shrimp and broccoli, just adjust cooking times.
