Ingredients
Scale
1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 pound zucchini, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
1/4 cup olive oil
1/4 cup hot honey
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the chicken pieces, zucchini, and red bell pepper with olive oil, salt, and pepper.
Spread the chicken and vegetables in a single layer on the prepared baking sheet.
In a small bowl, whisk together the hot honey, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using).
Pour the hot honey glaze over the chicken and vegetables, ensuring everything is evenly coated.
Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized, flipping halfway through.
Garnish with fresh chopped parsley before serving.
Notes
For extra spice, add more red pepper flakes to the glaze.
If you don’t have hot honey, you can make your own by warming regular honey with a pinch of red pepper flakes.
Ensure the chicken is cooked to an internal temperature of 165°F (74°C).
