  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh herbs (such as parsley, chives, and dill)
  • 8 slices ham
  • 1 cup shredded cheese (such as Swiss or Gruyere)

Instructions

  1. In a bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.
  2. Stir in the fresh herbs.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.
  5. Cook for about 2 minutes per side, or until golden brown.
  6. Repeat with the remaining batter.
  7. Lay a crepe flat. Top half of the crepe with 1 slice of ham and some shredded cheese.
  8. Fold the other half of the crepe over the filling.
  9. Repeat with the remaining crepes, ham, and cheese.
  10. Serve warm.
