1 tablespoon olive oil
1 pound breakfast sausage, casings removed
1 medium onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
2 cups diced potatoes (about 2 medium potatoes)
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large eggs
2 tablespoons chopped fresh parsley, for garnish
Instructions
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the skillet.
Add the chopped onion and red bell pepper to the skillet. Cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Add the diced potatoes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the potatoes are tender and browned, about 15-20 minutes. You can cover the skillet for the last 5-10 minutes to help them cook through.
Return the cooked sausage to the skillet with the potatoes and vegetables. Stir to combine.
Make four wells in the mixture. Crack an egg into each well.
Transfer the skillet to a preheated oven at 375°F (190°C). Bake for 8-12 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
Garnish with fresh parsley before serving.
Notes
For crispier potatoes, you can parboil them for 5 minutes before adding them to the skillet.
Feel free to add other vegetables like mushrooms or spinach.
