  • 1 (3-4 pound) boneless, skin-on turkey breast
  • 2 tablespoons olive oil
  • 1 large lemon, zested and juiced
  • 4 sprigs fresh rosemary, leaves chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the olive oil, lemon zest, lemon juice, chopped rosemary, minced garlic, salt, and pepper. This is your bright flavor paste.
  3. Place the turkey breast in a roasting pan. Rub the herb and citrus paste all over the turkey breast, making sure to get some under the skin if possible.
  4. Pour the chicken broth into the bottom of the roasting pan.
  5. Roast the turkey for approximately 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C).
  6. Baste the turkey with the pan juices every 20 minutes during cooking.
  7. Once cooked, remove the turkey from the oven. Tent it loosely with foil and let it rest for 15 minutes before slicing.
  8. Carve and serve immediately, spooning the pan juices over the slices.
