Roasted Cabbage with Garlic Butter

This recipe shows you how to roast cabbage wedges with a simple garlic butter mixture until they are tender and slightly caramelized.

  • 1 medium head green cabbage
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Remove any loose outer leaves from the cabbage. Cut the cabbage into 8 equal wedges, keeping the core intact to hold the leaves together.
  3. In a small saucepan over low heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown. Remove from heat.
  4. In a small bowl, mix the melted garlic butter with the olive oil, salt, and pepper.
  5. Place the cabbage wedges on the prepared baking sheet. Brush the garlic butter mixture evenly over all sides of the wedges.
  6. Roast for 20 to 25 minutes, flipping the wedges halfway through the cooking time. The cabbage should be tender when pierced with a fork and the edges should show some browning.
  7. Remove from the oven and serve immediately.

Notes

  • For extra flavor, sprinkle 2 tablespoons of grated Parmesan cheese over the wedges during the last 5 minutes of roasting.
  • A squeeze of fresh lemon juice after roasting brightens the flavor.
  • If you prefer softer cabbage, increase the roasting time by 5 to 10 minutes.
