1 pound Brussels sprouts, trimmed and halved
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup balsamic vinegar
1 tablespoon maple syrup (or brown sugar)
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
Spread the sprouts in a single layer on a baking sheet.
Roast for 20 to 25 minutes, shaking the pan halfway through, until they are tender and slightly browned.
While the sprouts roast, prepare the glaze: Combine the balsamic vinegar and maple syrup in a small saucepan.
Bring the mixture to a simmer over medium heat. Reduce the heat to low and cook for 5 to 7 minutes, stirring occasionally, until the glaze thickens enough to coat the back of a spoon. It should reduce by about half.
Remove the sprouts from the oven. Drizzle the warm balsamic glaze over the roasted sprouts immediately before serving.
Notes
For extra crispiness, use the highest heat your oven allows and roast on a single layer without overcrowding the pan.
If you prefer a thicker glaze, add a tiny bit of cornstarch mixed with water at the end of simmering.
You can substitute honey for maple syrup in the glaze if you like.
