Ingredients
Scale
1 cup heavy cream
8 ounces bittersweet chocolate, chopped
1/4 cup granulated sugar
2 large eggs, separated
1 teaspoon vanilla extract
Pinch of salt
Instructions
Melt the chopped bittersweet chocolate in a heatproof bowl over a saucepan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
In a separate bowl, whip the heavy cream until stiff peaks form. Set aside.
In another bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Stir in the vanilla extract.
Gently fold the slightly cooled melted chocolate into the egg yolk mixture until well combined.
In a clean, dry bowl, beat the egg whites with a pinch of salt until stiff peaks form.
Carefully fold the whipped cream into the chocolate mixture, followed by the beaten egg whites, until just combined. Be gentle to keep the mousse light and airy.
Spoon the mousse into individual serving cups or glasses.
Chill in the refrigerator for at least 2 hours, or until set.
Notes
For a richer flavor, use high-quality bittersweet chocolate.
Ensure your bowls and whisk are clean and dry when whipping egg whites for best results.
You can garnish with chocolate shavings or fresh berries before serving.
