  • 1 cup buttermilk

  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1-2 ounces red food coloring
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon peppermint extract
  • 1/4 cup crushed candy canes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In a separate bowl, combine the buttermilk, vegetable oil, eggs, vinegar, vanilla extract, and red food coloring.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  7. While the cupcakes cool, prepare the peppermint frosting. In a medium bowl, beat the softened butter until creamy.
  8. Gradually add the powdered sugar, alternating with the milk, until smooth and creamy.
  9. Stir in the peppermint extract.
  10. Once the cupcakes are completely cool, frost them generously with the peppermint frosting.
  11. Garnish with crushed candy canes.
