Quinoa and Black Bean Stuffed Squash

  • 1 acorn squash, halved and seeded
  • 1 tablespoon olive oil
  • 1/2 cup cooked quinoa
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 cup corn, fresh or frozen
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper (any color)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime wedge

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the squash halves cut-side down on a baking sheet.
  3. Roast for 30-40 minutes, or until tender.
  4. While the squash is roasting, prepare the filling. In a bowl, combine cooked quinoa, black beans, corn, red onion, and bell pepper.
  5. Add chili powder, cumin, salt, and pepper. Mix well.
  6. Once the squash is tender, carefully flip the halves over.
  7. Spoon the quinoa and black bean mixture into the cavities of the roasted squash.
  8. Return the stuffed squash to the oven for another 10-15 minutes, until heated through and slightly golden.
  9. Serve warm with your favorite toppings.

Notes

  • You can use other types of winter squash like butternut or delicata.
  • Feel free to add other vegetables like diced zucchini or spinach to the filling.
  • For a spicier kick, add a pinch of cayenne pepper.
