1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)

Instructions
If using wooden skewers, soak them in water for at least 30 minutes before use.
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and red pepper flakes to create the marinade.
Add the cubed chicken to the marinade, toss to coat completely, and let it marinate for 15 minutes at room temperature, or up to 4 hours refrigerated.
Preheat your grill to medium heat, or preheat your oven to 400°F (200°C), or your air fryer to 380°F (195°C).
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
Cook the skewers: For grilling, cook for 10-12 minutes, turning occasionally, until cooked through. For baking, place on a lined baking sheet and bake for 15-18 minutes. For air frying, cook in batches for 10-12 minutes, flipping halfway.
Brush any remaining marinade over the skewers during the last few minutes of cooking.
Remove from heat and serve immediately.
Notes
For extra flavor, toss the cooked skewers with a sprinkle of toasted sesame seeds and chopped green onions before serving.
If you prefer a thicker sauce, reserve 2 tablespoons of the marinade before adding the raw chicken, then simmer it in a small saucepan until reduced and thick, and brush this glaze over the skewers near the end of cooking.
