  • 2 teaspoons baking powder

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup pumpkin puree
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a separate medium bowl, whisk together the eggs, milk, pumpkin puree, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay. Do not overmix.
  5. Grease your waffle iron if necessary.
  6. Pour about 1/2 cup of batter onto the preheated waffle iron.
  7. Cook until golden brown and crisp, or according to your waffle iron’s instructions.
  8. Repeat with the remaining batter.
  9. Serve immediately with your favorite toppings like maple syrup, whipped cream, or extra cinnamon.

Notes

  • For crispier waffles, use a little less milk.
  • You can add a tablespoon of brown sugar for a deeper flavor.
  • If you don’t have all the spices, a pre-made pumpkin pie spice blend can be used (about 2 teaspoons).
  • Leftover batter can be stored in the refrigerator for up to 2 days.
