1/2 cup vanilla or unflavored whey protein powder
1/4 cup collagen peptides powder
1/4 teaspoon baking soda
Pinch of salt
1/4 cup maple syrup or preferred liquid sweetener
1/4 cup melted coconut oil or butter
1 large egg
1 teaspoon vanilla extract
1/4 cup unsweetened almond milk (or more as needed)
1/4 cup dark chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
In a medium bowl, whisk together the almond flour, cocoa powder, protein powder, collagen powder, baking soda, and salt.
In a separate small bowl, mix the maple syrup, melted coconut oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined. The batter will be thick.
Stir in the chocolate chips, if using. If the batter seems too stiff to scoop, add almond milk one teaspoon at a time until a thick, scoopable consistency is reached.
Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 12 to 15 minutes. The edges should look set, but the center should remain slightly soft for a fudgy texture.
Let the bites cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Notes
Collagen dissolves well, but avoid overmixing the batter once wet ingredients are added to maintain a tender texture.
For a richer flavor, use dark cocoa powder.
Store cooled bites in an airtight container in the refrigerator for up to one week.
