Preserved Lemon and Tomato Chicken

This Mediterranean-inspired chicken dish features tender chicken simmered with salty-tangy preserved lemons and sweet summer tomatoes for a bright and flavorful meal.

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 preserved lemons, rinsed and finely chopped
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, chopped preserved lemons, and chicken broth. Bring the mixture to a simmer.
  5. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through.
  6. Stir in fresh parsley before serving.

  • Serve this dish with couscous, rice, or crusty bread to soak up the delicious sauce.
  • For a richer flavor, you can use bone-in, skin-on chicken thighs, increasing the cooking time slightly.
