4 boneless, skinless chicken thighs
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
2 preserved lemons, rinsed and finely chopped
1/2 cup chicken broth
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Instructions
Season chicken thighs with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Stir in diced tomatoes, chopped preserved lemons, and chicken broth. Bring the mixture to a simmer.
Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through.
Stir in fresh parsley before serving.
Notes
Serve this dish with couscous, rice, or crusty bread to soak up the delicious sauce.
For a richer flavor, you can use bone-in, skin-on chicken thighs, increasing the cooking time slightly.
