  • Fresh basil leaves for garnish (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque. Season with salt and pepper.
  3. Add cooked pasta to the skillet with the shrimp.
  4. Stir in the basil pesto. If the pasta seems too dry, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency.
  5. Stir in the toasted pine nuts.
  6. Serve immediately, garnished with fresh basil and Parmesan cheese if desired.
