Ingredients
Scale
8 ounces cream cheese, softened
1/2 cup powdered sugar
1/2 cup packed light brown sugar
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans, toasted
1/2 cup light corn syrup
1/4 cup granulated sugar
2 tablespoons heavy cream
1/4 teaspoon vanilla extract
Pinch of salt
Instructions
Beat the softened cream cheese, powdered sugar, brown sugar, softened butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt together in a medium bowl until smooth and fully combined.
Spread the cream cheese mixture evenly into a shallow serving dish.
In a small saucepan, combine the corn syrup, granulated sugar, heavy cream, 1/4 teaspoon vanilla extract, and a pinch of salt.
Heat the mixture over medium heat, stirring constantly until the sugar dissolves and the mixture begins to simmer. Cook for 2 minutes without stirring after it starts simmering.
Remove the saucepan from the heat and stir in the toasted chopped pecans.
Pour the warm pecan caramel mixture evenly over the cream cheese base.
Chill the dip for at least 2 hours before serving to allow it to set.
Notes
Serve this dip chilled with vanilla wafers, graham crackers, apple slices, or pretzels for dipping.
You can toast the pecans by spreading them on a baking sheet and baking at 350°F for 5 to 7 minutes.
