Pear and Gorgonzola Arugula Salad

This light and flavorful Pear and Gorgonzola Arugula Salad makes a wonderful, bright side dish for any gathering, especially during the holidays. You will love the balance of sweet pear, tangy cheese, and peppery greens, all brought together with a simple vinaigrette.

Ingredients

  • 4 cups arugula
  • 2 ripe pears, thinly sliced
  • 4 ounces Gorgonzola cheese, crumbled
  • 1/4 cup chopped walnuts, toasted
  • For the Vinaigrette:
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, and honey. Season with salt and pepper. Set aside.
  2. In a large bowl, combine the arugula and sliced pears.
  3. Pour about half of the vinaigrette over the arugula and pears. Gently toss to coat the greens lightly.
  4. Divide the salad among serving plates.
  5. Top each serving with crumbled Gorgonzola cheese and toasted walnuts.
  6. Drizzle any remaining vinaigrette over the cheese and nuts just before serving.

Notes

  • Choose firm but ripe pears for the best texture. Bosc or Anjou work well.
  • Toasting the walnuts brings out their flavor; watch them closely so they do not burn.
  • You can substitute blue cheese for Gorgonzola if you prefer a different sharpness.
  • Make the vinaigrette ahead of time and store it in the refrigerator for up to three days.
