6 cups puffed rice cereal
1 (10 ounce) package marshmallows
3 tablespoons butter
1 cup creamy peanut butter
Instructions
Lightly grease a 9×13 inch baking pan or line it with parchment paper.
In a large saucepan over low heat, melt the butter.
Add the marshmallows to the melted butter and stir constantly until completely melted and smooth. Remove the pan from the heat.
Stir in the peanut butter until it is fully incorporated into the marshmallow mixture.
Add the puffed rice cereal to the marshmallow mixture. Stir gently until the cereal is evenly coated.
Transfer the mixture to the prepared baking pan. Gently press the mixture down evenly using a buttered spatula or wax paper. Do not pack too tightly, as this makes them hard.
Let the treats cool completely at room temperature for about 30 minutes before cutting into squares.
Notes
For extra gooey treats, slightly undercook the marshmallows, removing them from the heat just as they finish melting.
If you want a chocolate topping, melt 1 cup of semi-sweet chocolate chips with 1 tablespoon of peanut butter and drizzle over the cooled bars.
Use fresh marshmallows for the best texture. Stale marshmallows result in hard treats.
