Peanut Butter Cookies

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (213g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (360g) creamy peanut butter
  • 3 cups (375g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped peanuts for extra crunch

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the creamy peanut butter and mix until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If using, stir in the chopped peanuts.
  8. Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  9. Using a fork, press down on each cookie in a crisscross pattern to flatten them slightly.
  10. Bake for 9-12 minutes, or until the edges are lightly golden. The centers should still look soft.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra peanut flavor, use chunky peanut butter.
  • Don’t overbake the cookies; they will continue to set as they cool.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
