1 cup creamy peanut butter
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips
2 tablespoons shortening
Instructions
In a large bowl, beat together peanut butter and softened butter until smooth.
Gradually add powdered sugar and vanilla extract, mixing until well combined and a dough forms.
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Chill the peanut butter balls in the refrigerator for at least 30 minutes until firm.
In a microwave-safe bowl, combine chocolate chips and shortening. Microwave in 30-second intervals, stirring in between, until smooth and melted.
Dip each chilled peanut butter ball into the melted chocolate, ensuring it’s fully coated.
Place the chocolate-dipped balls back on the parchment-lined baking sheet.
Allow the chocolate to set completely at room temperature, or speed up the process by chilling them in the refrigerator.
Notes
For a smoother coating, you can add a little more shortening to the chocolate.
