  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour or all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. In a separate bowl, whisk together the rolled oats, flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients. Stir until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie slightly with the back of a spoon.
  6. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
