6 cups fresh peaches, sliced (about 8-10 medium peaches)
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1/4 cup unsalted butter, melted
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, gently toss the sliced peaches with 1/2 cup sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice.
Pour the peach mixture into a 9×13 inch baking dish.
In a separate medium bowl, whisk together 1 cup flour, 1/2 cup sugar, baking powder, and salt.
In another small bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Pour the batter evenly over the peaches.
Drizzle the melted butter over the batter.
Bake for 40-50 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let it cool slightly before serving.
Notes
Serve warm with vanilla ice cream or whipped cream for an extra treat.
If fresh peaches are not in season, you can use frozen peaches. Thaw them first and drain any excess liquid.
Adjust the spices to your preference. A pinch of cardamom can also be a lovely addition.
