Quick Sheet Pan Orange Ginger Salmon Bowls with Sesame Broccoli

Prepare a fast, flavorful meal featuring baked salmon coated in an orange ginger glaze, served over rice with crisp sesame broccoli.

  • 1.5 lb salmon fillets, skin on or off
  • 1 cup brown rice, uncooked
  • 2 cups water or broth
  • 1 head broccoli, cut into florets
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • For the Glaze:
  • 1/2 cup orange juice, fresh squeezed
  • 1/4 cup soy sauce or tamari
  • 3 tbsp honey or maple syrup
  • 2 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry)
  • For Serving:
  • 2 green onions, sliced

Instructions

  1. Cook the brown rice according to package directions using water or broth. Set aside.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Prepare the glaze: In a small saucepan, combine orange juice, soy sauce, honey, grated ginger, and minced garlic. Bring to a simmer over medium heat.
  4. Whisk in the cornstarch slurry and cook for 1 minute until the sauce thickens slightly. Remove from heat.
  5. Place the salmon fillets on one side of the prepared baking sheet. Brush half of the orange ginger glaze over the salmon.
  6. Toss the broccoli florets with sesame oil and a pinch of salt. Spread them on the other side of the baking sheet.
  7. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. While the salmon bakes, toss the cooked broccoli with sesame seeds.
  9. To assemble the bowls, divide the cooked rice among four bowls. Place a salmon fillet on top of the rice in each bowl.
  10. Arrange the sesame broccoli next to the salmon. Drizzle the remaining glaze over the salmon and rice. Garnish with sliced green onions.

Notes

  • You can substitute brown rice with quinoa or cauliflower rice for a lower-carb option.
  • For extra heat, add 1/2 teaspoon of red pepper flakes to the glaze mixture before simmering.
  • If you prefer crispier broccoli, roast it for 5 minutes before adding the salmon to the pan.
