Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into pieces
  • 1 cup fresh or frozen cranberries
  • Zest of 1 large orange
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons orange juice, 1 teaspoon orange zest

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the cranberries and orange zest.
  5. In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface. Pat or lightly roll the dough into a 3/4-inch thick circle.
  8. Cut the circle into 8 wedges (like a pizza). Place wedges on the prepared baking sheet.
  9. Bake for 15-18 minutes, or until the edges are lightly golden. Let cool completely on a wire rack.
  10. Prepare the glaze: Whisk the powdered sugar, orange juice, and orange zest until smooth.
  11. Drizzle the glaze over the cooled scones. Let the glaze set before serving.

Notes

  • If using frozen cranberries, do not thaw them before adding them to the dough.
  • For a richer flavor, use fresh orange juice for the glaze.
  • You can brush the tops of the scones with a little milk before baking for a slightly browner top.
