1 pound pasta
4 cups vegetable broth
1 cup milk
1 cup frozen corn
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
2 tablespoons olive oil
1 tablespoon lemon zest
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
In a large pot, combine pasta, vegetable broth, milk, corn, Parmesan cheese, basil, olive oil, and lemon zest.
Bring to a boil over medium-high heat.
Reduce heat to medium and cook, stirring occasionally, until pasta is al dente and sauce has thickened, about 10-12 minutes.
Stir in lemon juice.
