1 pound lean ground turkey or beef
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt

1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
4 cups low sodium chicken broth
8 ounces lasagna noodles, broken into 1-inch pieces
1 cup part-skim ricotta cheese
1/2 cup cottage cheese (low fat)
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
Add the chopped onion to the pot and cook until softened, about 5 minutes.
Stir in the minced garlic, basil, oregano, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the crushed tomatoes, tomato sauce, and chicken broth. Bring the mixture to a boil.
Add the broken lasagna noodles. Reduce the heat to medium-low, cover, and simmer for 10 to 12 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
While the soup simmers, combine the ricotta cheese, cottage cheese, and Parmesan cheese in a small bowl. Mix well.
Remove the pot from the heat. Stir in the cheese mixture until it melts and thickens the soup slightly.
Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
For a gluten-free version, substitute the lasagna noodles with 1 cup of small pasta shapes like ditalini or rotini.
To increase the protein further, add 1/2 cup of cooked lentils when you add the broth.
You can substitute the cottage cheese with more ricotta if preferred, though the cottage cheese adds a slightly different texture and protein boost.
