One-Pot Creamy Cajun Pasta

Make an easy, comforting weeknight dinner with this One-Pot Creamy Cajun Pasta. You get all the rich flavor of Cajun spices and creamy sauce without the extra cleanup. This recipe brings a little bit of Sunday Flavor to your busy day.

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 12 ounces penne or rotini pasta
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Season the chicken pieces with Cajun seasoning.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. Add onion to the same pot and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in diced tomatoes (with liquid), chicken broth, pasta, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender and most liquid is absorbed.
  6. Stir in the heavy cream and cooked chicken. Heat through gently, do not boil after adding cream.
  7. Remove the pot from the heat. Stir in the Parmesan cheese until melted and the sauce is creamy.
  8. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • You can substitute shrimp for chicken for a seafood version.
  • Adjust the amount of Cajun seasoning to control the level of spice you prefer.
  • Use low-sodium chicken broth if you are watching your salt intake.
