1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 large head of broccoli, cut into florets
3 tablespoons olive oil, divided
2 tablespoons harissa paste
1/4 cup orange juice, fresh squeezed preferred
2 tablespoons honey or maple syrup
1 tablespoon soy sauce or tamari
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 orange, thinly sliced for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
In a medium bowl, whisk together the harissa paste, orange juice, honey, soy sauce, ginger, garlic, 1 tablespoon of olive oil, salt, and pepper to create the glaze.
Place the cut chicken pieces in a separate bowl. Pour half of the harissa-orange glaze over the chicken and toss to coat evenly. Set aside to marinate while you prepare the broccoli.
Place the broccoli florets on the prepared baking sheet. Drizzle with the remaining 2 tablespoons of olive oil and toss to coat. Spread the broccoli into an even layer.
Arrange the marinated chicken pieces among the broccoli florets on the baking sheet, ensuring everything is in a single layer for even cooking.
Bake for 15 minutes.
Remove the pan from the oven. Brush the remaining half of the reserved glaze over the chicken and broccoli.
Return the pan to the oven and bake for another 8 to 12 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the sauce has thickened into a light glaze.
Serve immediately, optionally garnished with fresh orange slices.
Notes
For a thicker glaze, you can simmer the reserved half of the glaze in a small saucepan over medium heat for 2-3 minutes until slightly reduced before brushing it on the chicken and broccoli during the last step.
If you prefer softer broccoli, toss it with the chicken for the entire cooking time. For crispier broccoli, add it to the pan only for the last 15 minutes of baking.
