One Pan Chipotle Honey Chicken and Rice

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 chipotle pepper in adobo sauce, minced
  • 2 tbsp adobo sauce
  • 3 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chopped cilantro, lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the minced chipotle pepper, adobo sauce, honey, olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Place the chicken thighs in a baking dish or oven-safe skillet. Pour half of the chipotle honey mixture over the chicken, ensuring it’s well coated.
  4. Add the uncooked rice to the baking dish around the chicken. Pour the chicken broth over the rice.
  5. Pour the remaining chipotle honey mixture over the rice and broth.
  6. Cover the baking dish tightly with foil.
  7. Bake for 30 minutes.
  8. Remove the foil and bake for another 10-15 minutes, or until the chicken is cooked through and the rice is tender and has absorbed most of the liquid.
  9. Let it rest for a few minutes before serving. Garnish with cilantro and serve with lime wedges if desired.

Notes

  • Adjust the amount of chipotle pepper to control the spice level.
  • You can use chicken breasts instead of thighs, but adjust the cooking time as needed to prevent them from drying out.
  • Ensure the foil is sealed tightly to trap steam for cooking the rice.
