Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 cups cooked, shredded chicken breast
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Whisk in the flour until it forms a thick paste (roux) with the vegetables. Cook for 1 minute, stirring constantly.
  4. Slowly whisk in the chicken broth until smooth. Add the thyme, rosemary, pepper, and salt. Bring the mixture to a simmer, stirring occasionally.
  5. Reduce the heat to low and let it simmer for 10 minutes to allow the flavors to meld and the sauce to thicken slightly.
  6. Stir in the heavy cream, cooked shredded chicken, and the uncooked potato gnocchi.
  7. Increase the heat to medium-low and cook until the gnocchi float to the surface and are tender, usually about 3 to 5 minutes. Do not boil once the cream is added.
  8. Stir in the fresh spinach until it wilts into the soup, about 1 minute.
  9. Taste and adjust seasonings if needed before serving your restaurant style soup at home.

Notes

  • For the best texture, use store-bought potato gnocchi. Do not overcook the gnocchi, or they will become mushy.
  • You can substitute rotisserie chicken for the cooked chicken to make this an even quicker dinner soup idea.
  • If you prefer a thicker soup, simmer uncovered for an extra 5 minutes before adding the cream.
  • This recipe freezes well if you omit the spinach until reheating.
