Oatmeal Peach Crisp (with Fresh Peaches)

  • 4 cups fresh peaches, sliced (about 4-5 medium)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, gently toss the sliced peaches with 2 tablespoons of flour, 1 tablespoon of granulated sugar, and lemon juice. Spread this mixture evenly in the bottom of an 8×8 inch baking dish.
  3. In a separate bowl, combine the rolled oats, 1/2 cup of flour, brown sugar, cinnamon, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Sprinkle this oat topping evenly over the peach mixture in the baking dish.
  6. Bake for 30-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  7. Let it cool for at least 10 minutes before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream for an extra treat.
  • If fresh peaches are not in season, you can use frozen peaches (do not thaw) or canned peaches (drained well).
  • For a nuttier flavor, add 1/4 cup of chopped pecans or walnuts to the oat topping.
