  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For easier removal, line the baking pan with parchment paper, leaving an overhang on the sides.
  • If using frozen blueberries, do not thaw them before adding to the batter.
  • Store the cooled bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
