Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh Nova Scotia blueberries
  • 1/4 cup granulated sugar (for blueberries)
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, alternating with 1/2 cup milk, beginning and ending with dry ingredients. Mix until just combined.
  5. Divide batter evenly between prepared cake pans. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
  6. For the blueberry filling, combine blueberries, 1/4 cup granulated sugar, lemon juice, and cornstarch in a small saucepan. Cook over medium heat, stirring constantly, until mixture thickens, about 5-7 minutes. Remove from heat and let cool completely.
  7. For the cream cheese frosting, beat softened cream cheese and 1/2 cup softened butter together until smooth. Gradually add powdered sugar, one cup at a time, beating until combined. Stir in vanilla extract and 2-3 tablespoons milk or cream until desired consistency is reached.
  8. To assemble the cake, place one cake layer on a serving plate. Spread cooled blueberry filling over the top. Place the second cake layer on top. Frost the entire cake with cream cheese frosting.
  9. Serve immediately or refrigerate until ready to serve.

Notes

  • Ensure all dairy ingredients are at room temperature for smooth mixing.
  • Do not overmix the cake batter; mix until just combined to keep the cake tender.
  • Allow the blueberry filling to cool completely before spreading on the cake to prevent the frosting from melting.
  • Fresh Nova Scotia blueberries are recommended for the best flavor.
