Ingredients
Scale
1 cup rolled oats
1/2 cup vanilla or unflavored whey/casein protein powder
1/4 cup freeze-dried strawberries, crushed into powder
2 tablespoons chia seeds
1/4 cup smooth almond butter or cashew butter
3 tablespoons maple syrup or honey
2 tablespoons milk (dairy or non-dairy)
1/2 teaspoon vanilla extract
Instructions
Place the rolled oats, protein powder, crushed freeze-dried strawberries, and chia seeds in a medium bowl. Mix the dry ingredients well.
Add the almond butter, maple syrup, milk, and vanilla extract to the dry mixture.
Stir everything together until a thick, uniform dough forms. If the mixture seems too dry, add milk one teaspoon at a time until it holds together when pressed.
Roll the dough into small, uniform balls, about 1 inch in diameter. You should get about 12 to 14 bites.
Place the finished bites on a plate lined with parchment paper.
Refrigerate for at least 30 minutes to firm up before serving.
Notes
For a stronger strawberry flavor, add 1 teaspoon of strawberry extract along with the vanilla.
If you prefer a gluten-free option, ensure your rolled oats are certified gluten-free.
Store the finished bites in an airtight container in the refrigerator for up to one week.
