1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1/4 teaspoon peppermint extract
1 tablespoon unsalted butter
1/2 cup crushed candy canes
Optional: White chocolate, melted, for drizzling
Instructions
Place chocolate chips in a heatproof bowl.
Heat heavy cream in a small saucepan over medium heat until simmering, but not boiling.
Pour the hot cream over the chocolate chips. Let it sit for 5 minutes, then whisk until smooth and melted.
Stir in the peppermint extract and butter until fully combined.
Let the mixture cool at room temperature for about 30 minutes, or until it’s firm enough to roll.
Roll the chocolate mixture into small balls, about 1 inch in diameter.
Place the crushed candy canes on a plate. Roll each truffle in the crushed candy canes to coat.
Place the truffles on a parchment-lined baking sheet.
If desired, drizzle with melted white chocolate.
Refrigerate for at least 30 minutes to set before serving.
Notes
For a deeper chocolate flavor, use dark chocolate chips.
Adjust the amount of peppermint extract to your preference.
Store truffles in an airtight container in the refrigerator.
