Ingredients
Scale
6 ripe nectarines, pitted and sliced
1/4 cup granulated sugar (for filling)
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the sliced nectarines, granulated sugar, cornstarch, and vanilla extract. Toss gently to coat the nectarines evenly. Pour the mixture into the prepared baking dish.
In another medium bowl, combine the flour, rolled oats, brown sugar, cinnamon, and salt. Whisk to combine.
Add the cold butter pieces to the dry ingredients. Use your fingertips or a pastry blender to cut the butter into the mixture until it resembles coarse crumbs.
Sprinkle the crumble topping evenly over the nectarine mixture in the baking dish.
Bake for 35-45 minutes, or until the topping is golden brown and the nectarine filling is bubbly.
Let the crumble cool for at least 15 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
You can substitute peaches or a mix of berries for nectarines.
Store leftover crumble in the refrigerator for up to 3 days.
