Crumble Bars

These crumble bars are a delightful treat, combining a buttery crust with a sweet nectarine filling and a crunchy crumble topping.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3-4 ripe nectarines, peeled, pitted, and sliced
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk the egg and vanilla extract. Add to the flour mixture and mix until just combined. The dough will be crumbly.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared pan.
  6. In another bowl, combine the sliced nectarines, brown sugar, cornstarch, and cinnamon. Toss gently to coat.
  7. Spoon the nectarine mixture evenly over the crust in the pan.
  8. Crumble the remaining dough over the nectarine layer.
  9. Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
  10. Let cool completely in the pan on a wire rack before lifting out and cutting into bars.

Notes

  • Choose ripe but firm nectarines for the best results.
  • You can substitute other stone fruits like peaches or plums.
  • Store at room temperature in an airtight container for up to 3 days, or refrigerate for up to a week.
